  • Flaky Pie Crust Recipe Below
  • 2 egg whites, beaten
  • 1 cup white sugar
  • 6 tablespoons flour
  • 3 cups milk
  • 2  whole eggs, beaten
  • 6 tablespoons butter, cubed
  • 1/2 lemon , juiced
  • 12 medium strawberries, sliced
  • 6 tablespoons strawberry jelly, melted

Strawberry Cream Tart

Directions:

Make the pie crust and place in refrigerator to cool for one hour. Roll out and place in individual tart pans.  Place on two baking sheets. Bake at 375° for 15 minutes or till done. Cool completely on wire racks.


Use a heavy duty saucepan and combine the sugar and flour; gradually stir in milk until smooth. Bring the milk mixture to a boil over over medium heat, stirring constantly; cook and stir for 1 minute. Remove the pan from the heat. Stir a small amount of hot milk mixture into eggs; return all to the pan, stirring constantly.

Bring to a gentle boil; cook and stir for 1 minute. Remove the pan from the heat and stir in butter and lemon juice. Refrigerate until chilled. Just before you are ready to serve, spoon the custard into shells; top with the strawberries. Spoon jelly over fruit. Makes: 12 tarts.

  1. Place two cups of flour in the food processor with 6 tablespoon of shortening and 1 stick of butter that is cold and cut into chunks. Add in a pinch of salt and pulse until the mixture is very fine. Slowly add in 1/2 cup of ice cold water. Keep pulsing till the mixture forms a ball. Remove from the food processor and knead slightly and put in the refrigerator for one hour.
  2. When ready to make the pie, remove the pie crust and let set on your counter for 15 minutes. Divide the dough into two parts. Roll out the bottom pie crust and place in a buttered pie plate. Trim off the edges two inches below the edge. If using a fork, dip in flour first. After the crust is ready. Take a fork and make indentions all over the crust with a fork.
